March 26, 2021

“For family and friends meeting up again after an extended hibernation, doshiraks offer a beautiful way to share a meal, packed up elegantly in individual servings, portable to any outdoor activity. ‘You do see the jeong,’ said Ms. Kim, using the Korean word for a profound feeling of shared warmth and connection. ‘You see the love in the way doshiraks have been crafted.’”

Gyeran Mari Recipe
March 2021

“Chef Susan Kim sells Korean to-go lunch boxes filled with beautifully prepared vegetables and various banchan, or small side dishes, through her NYC-based pop-up Eat Doshi. We were so enamored of these beautiful doshirak that we asked Kim to teach us how to recreate a home-cooked version that includes these savory rolled-egg omelet slices filled with toasted seaweed snacks and a secret ingredient: Parm shavings. They’re equally good enjoyed on their own as a little snack, as a side dish to a larger meal, or sliced and served with a bowl of rice.”

This NYC Korean-Inspired Restaurant Pop-Up Is Not Afraid to Have Fun
November, 2020

“After years spent working in restaurants—among them Chez Panisse, Agern, and Insa—chef Susan Kim has been using her pandemic time to finally launch her own business. But Doshi—short for doshirak in Korean, which means a packaged meal or boxed lunch—is not a restaurant of her own, but rather a roving Korean-inspired food pop-up with menus and locations that change.”
